Flavors and history: an authentic Maremma cuisine experience

Tours

Cooking class in Scansano and afternoon visit to the medieval village of Magliano

by New Tuscany

In Maremma, cooking is a sacred ritual passed down from generation to generation.

Each dish holds family secrets and a story that no traditional guide can fully reveal: a narrative of ancient gestures and genuine local ingredients that faithfully follow the rhythm of the seasons.

This Tuscan culinary tradition is learned with love and dedication, often by silently observing expert hands crafting the ingredients.

During this experience in the charming village of Scansano, we will have the privilege of learning these skills at our leisure. Under the guidance of an expert local chef, you will learn the essence behind every recipe, from the preparation of handmade pasta to the selection of local products.

You will be guided and corrected step by step, discovering the secrets of iconic dishes like Maremma tortelli or traditional peasant soups.
It's a sensory journey designed for those seeking an authentic connection with the gastronomic roots of this land, where flavor meets history in every bite.

In the afternoon, we'll reach Magliano in Toscana. With our guide, we'll explore the village, strolling through its streets and along the medieval walls.

Programme

In Scansano you’re welcomed into the kitchen of a trattoria where your teacher is waiting. After a short introduction, it’s aprons on, and you start cooking a menu that you’ll enjoy together.

First you learn how to choose seasonal ingredients.

You discover how to work each ingredient with care, the secrets of cooking times, marinades, and seasonings, and how every step builds the character of a dish. Then you move through handmade first courses, meat, and and last but not least, of course desserts!

The dessert session is part of the experience: you prepare the doughs behind the specialties most rooted in this land.

In the afternoon you head to Magliano in Toscana. With your guide, you’ll take a walk through the village streets and along the medieval walls, still perfectly preserved with a view overlooking the Maremma countryside.
